Some of the functions of a default email provider means, that when you click on a email link on a web page, it will open up an email in your default program, i.e. Presently, for those on this thread and on threads on the net, it opens up apple mail.
Unlike setting up a default browser where you just had to go to the system panel and choose a browser to be set up as the default one, setting up an email client requires you to access the Mail app on your Mac. Launch the Mail client in OS X (it's inside the Applications folder) and then go to Mail > Preferences. Click on the General tab and look for 'Default email reader'. Select another mail client or browser from the drop down menu and then close the Preferences window.
Mail.app, the email client that is bundled with macOS, is surprisingly robust. Still, it does have some limitations, leading many to switch to third-party email clients.
